Ingredients
Main ingredients:
4 large eggs, lightly beaten
1-2 medium tomatoes, cut into 1-inch wedges
2 tbsp cooking oil, divided
Optional Garnishes:
Dash of sesame oil
Sliced green onions
Seasoning:
2 tbsp ketchup
1 tbsp sugar
1/2 tsp salt
2 tbsp water
Instructions
1. Prep the eggs and tomatoes
In a small bowl, beat the 4 eggs. Cut tomatoes into 1-inch wedges.




2. Soft-Scramble Eggs
Heat 1 tbsp oil. Add eggs and cook, pushing gently, until 80% set (still soft). Remove eggs from the pan.


3. Cook Tomatoes and Add Seasoning
Heat 1 tbsp oil in the same pan. Add tomatoes and seasoning, and cook for 1-2 minutes until tomatoes start to soften.


4. Combine & Finish
Add the cooked eggs to the tomatoes and gently fold everything together for 30-60 seconds. Add a dash of sesame oil and scallions. Serve immediately.
