Simple Teriyaki Chicken: The "Four Ones" Recipe

This recipe is incredibly easy and perfect for a quick, flavorful family meal.

Ingredients

Main ingredients:

  • 1 lb boneless, skinless chicken thighs (cut into 1-inch pieces) or chicken breast

  • 1 tbsp oil

  • 1 tbsp sake (Japanese rice wine)

  • 1 tbsp mirin (sweet Japanese rice wine)

  • 1 tbsp sugar

  • 1 tbsp soy sauce

Optional Garnishes:

  • Sesame seeds

  • Sliced green onions

Instructions

1. Prepare the Sauce

In a small bowl, whisk together the sake, mirin, sugar, and soy sauce until the sugar is dissolved. Set aside.

2. Cut the Chicken and Marinade

Cut chicken into bite-size pieces and add marinade. Let it sit for 30 minutes.

Pro tip

Drain the marinade so when the chicken cooks it creates a nice and dry sear, not drowning in sauce.

3. Cook the Chicken

Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook, 3-4 minutes until browned on each side and mostly cooked through (about 5-7 minutes). DO NOT flip them all the time.

4. Add the Sauce

our the prepared teriyaki sauce over the chicken in the skillet. Bring to a simmer and stirring frequently. Once you see a shiny and thick glaze, it’s done!

5. Serve

Remove from heat. Garnish with sesame seeds and sliced green onions, if desired. Serve immediately over steamed rice and with your favorite vegetables.
